Try your hand at these gingerbread biscuits—festive, easy to make, and a great family activity. Get everyone involved in the joy of baking and decorating!
Ingredients
25g unsalted butter, softened
60g soft brown sugar
90g golden syrup
1 large egg
300g plain flour
50g self-raising flour
1 tsp bicarbonate of soda
1 tsp ground ginger
gingerbread men cookie cutter
For the Royal Icing
1 egg white
squeeze of lemon
200g icing sugar
red and green food colouring
Method
– Preheat the oven to 180°C / 160°C with a fan.
– Place the butter, brown sugar, and golden syrup in a large bowl and use an electric whisk to beat for 2 minutes.
– Slowly add the egg while you continue to whisk.
– Add both flour, the bicarbonate of soda, and ground ginger. Use a fork to mix and then use your hands to form a dough. Cover in clingfilm and place it in the fridge to 5-7 minutes.
– Line your worktop or chopping board with baking paper. Dust with a little flour and roll out your dough to 3-4mm thick.
– Place the whole sheet in the fridge for 15-20 minutes to set.
– Use your cookie cutter to cut as many biscuits out as you can. Place these on a lined baking tray.
– Bake in the oven for 10-12 minutes.
– Remove them from the oven and place them on a cooling rack while you prepare the icing.
– Place the egg white in a large bowl and whisk to form soft peaks. Add the lemon juice and icing. Whisk to combine.
– Divide the icing into 3 bowls. Add green food colouring to one, red food colouring to another, and leave one white.
– Decorate how you like. I have used a piping bag to get as much detail as possible.
