CHEESY CHICKEN SANDWICH

A quick healthy sandwich that is full of flavour and a little hit of spice too. I often have some cooked chicken in the fridge to make quick meals like this sandwich filling, which works perfectly with a hit of chilli chutney and freshness from the dill. The cheese acts as the perfect binding agent for this delicious sandwich. Makes 2.

Ingredients

  • 200 gms roast chicken, shredded
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp mayo
  • handful of fresh dill, chopped
  • 1/2 tsp chilli garlic chutney
  • 4 sourdough slices
  • 8 mozzarella slices
  • drizzle of chilli oil
  • olive oil to cook

Method

In a bowl mix the chicken with the salt, pepper, mayo, dill and chilli garlic chutney.

Place a slice of bread and spread half the chicken filling. Put 4 slices of mozzarella on top and a little drizzle of chilli oil. Place the second slice of bread.

Cook this on a hot pan with a little drizzle of oil until its golden and crispy. Enjoy.
