This delicious potato pickle recipe is inspired by the Nepalese potato pickle, which is refreshing, light and a unique combination of flavours. Enjoy it on its own or serve it with a barbecue, its delicious every way. I also make a lovely sandwich with it, using 2 slices of white bread and some chutney and toasting on a hot pan until crispy. Hope you will try that version as well.

Ingredients
- 800 gms potatoes
- 2 red onions, thinly sliced
- 1/2 cucumber, thinly sliced
- handful of fresh coriander, finely chopped
- 3 tbsp roasted sesame seeds
- 1 tsp ground cumin
- 1 tsp chilli powder
- 3/4 tsp salt
- 4-6 green chillies, thinly sliced
- 5 tbsp mustard oil
- 1 tsp fenugreek seeds
- juice of 1/2 lemon
Peel and chop the potatoes into small cubes. Boil them until soft and cooked, then drain and leave them aside.
In a large bowl add the onions, cucumber, coriander and the cooked potatoes and mix well.
In a pestle and mortar crush the sesame seeds to a coarse powder. Now add the cumin, chilli and salt to it and mix well. Pour this spice blend on the potato mix.
Heat the oil in a pan until its smoky and very hot. Turn the heat off and add the fenugreek and chillies to it. Mix well then pour this on top of the potato mix and combine it all well. Drizzle the lemon juice on top and give it a good mix and serve.
