A simple and quick noodles recipe made with lovely vegetables and new noodles for me. A very Indian style Chinese! Hope you will enjoy these. Try them with my Manchurian chicken recipe.
Ingredients
3 garlic cloves, peeled and chopped
thumb-sized piece of ginger, peeled and chopped
1 onion, chopped
2-3 sunflower oil
½ cabbage, finely chopped
1 carrot, finely chopped
1 green pepper, thinly sliced
2 spring onions, sliced
300g noodles of choice (egg, udon, Canton, rice, etc)
1 tbsp chilli garlic paste
1 tsp dark soy sauce
1 tsp light soy sauce
1 tsp white vinegar
1 tbsp oyster/mushroom sauce
½ tsp salt
Pinch black pepper
Method
– Heat the oil in a pan and add the ginger and garlic.
– Next, add the red chillies and onions and cook for a couple of minutes until softened.
– Add the cabbage and stir through.
– Add the carrot, pepper and spring onions.
– Cook the noodles according to instructions.
– Add the soy sauces, vinegar, oyster or mushroom sauces, salt and pepper to the mix and stir through.
– Add the noodles and mix through.
– Sprinkle some sliced spring onions over the noodles to serve.
