A simple and quick noodles recipe made with lovely vegetables and new noodles for me. A very Indian style Chinese! Hope you will enjoy these. Try them with my Manchurian chicken recipe.
3 garlic cloves, peeled and chopped
Thumb-sized piece of ginger, peeled and chopped
1 onion, chopped
2-3 sunflower oil
½ cabbage, finely chopped
1 carrot, finely chopped
1 green pepper, thinly sliced
2 spring onions, sliced
300g noodles of choice (egg, udon, Canton, rice, etc)
1 tbsp chilli garlic paste
1 tsp dark soy sauce
1 tsp light soy sauce
1 tsp white vinegar
1 tbsp oyster/mushroom sauce
½ tsp salt
Pinch black pepper
Heat the oil in a pan and add the ginger and garlic.
Next, add the red chillies and onions and cook for a couple of minutes until softened.
Add the cabbage and stir through.
Add the carrot, pepper and spring onions.
Cook the noodles according to instructions.
Add the soy sauces, vinegar, oyster or mushroom sauces, salt and pepper to the mix and stir through.
Add the noodles and mix through.
Sprinkle some sliced spring onions over the noodles to serve.
