Series 2 – Episode 8
TUNA MELT SANDWICH
This is a quick store cupboard sandwich that happens to be high in protein and ready in minutes so a great last minute healthy lunch. I have added lots of lovely flavours to the tuna in here to make it alive and sing in this sandwich. You can use any bread of your choice too. Makes 2.

Ingredients
- 160 gms tinned tuna
- 1 red onion, finely chopped
- handful of fresh coriander, finely chopped
- 2-3 tbsp mayo
- 1 tsp chilli garlic chutney
- 1 tsp lemon juice
- 1 tbsp pickled gherkins, chopped
- slices of sourdoough
- 4 tsp butter
- 4 slices of cheddar cheese
- olive oil
Method
In a bowl mix the tuna with the onions, coriander, mayo, chilli garlic chutney, lemon juice, gherkins and combine it all well.
Spread some butter on the sourdough slices, then spread half the tuna mix, place a few slices of cheese on top. Now place the second slice of sourdough then toast this in a hot pan with some olive oil. Enjoy!
