This method combines two of my favourite ingredients, peanut butter and chocolate. These are devine, so simple to make and ready in minutes. Perfect for those days when you’re craving a warm fresh cookie!

Ingredients
pinch of salt
100g unsalted butter, softened
100g crunchy peanut butter
100g golden caster sugar
100g soft brown sugar
1 large egg
150g plain flour
100g dark chocolate, ideally 70 % cocoa
Method
– Preheat the oven to 180°C / 160°C with a fan.
– Beat the softened butter until smooth and then add in the crunchy peanut butter, mixing well.
– Add the sugar and whisk again before adding the egg, a pinch of salt and the flour.
– Cover the mixture and let it rest in the fridge for around 15 minutes.
– Meanwhile, chop the chocolate chunks into pieces and then stir them in to the dough.
– Take a spoonful of the dough, shape it in to a ball and place on to a baking tray lined with baking parchment.
– Leave a little room between them to allow them to spread.
– Bake for 12 minutes.
