POTATO MOZZARELLA SANDWICH

This is such a winning combination for a sandwich. Just the simple ingredients put together creates this delicious sandwich that you can enjoy anytime of the day. I am using homemade bread but you can go for any slices you like, sourdough, seeded or white bread, its up to you. The chilli chutney is homemade too but you can use any chilli sauce you like, spicy or mild. Makes 2.

Ingredients

  • 1 tbsp olive oil
  • 1/2 tsp mustard seeds
  • 10 curry leaves
  • 2 onions, roughly chopped
  • 1/2 tsp salt
  • 1/2 tsp chilli powder
  • handful of dill, finely chopped
  • 2 potatoes, boiled and mashed
  • 125 gms mozzarella
  • 4 slices of yogurt bread (or any other bread of your choice)
  • chilli garlic chutney

Method

Heat the oil in a pan and add the mustard seeds and let them pop and sizzle. Then add the curry leaves and let them sizzle too.

Next add the onions and cook on medium heat for 6-8 minutes until nicely golden. Transfer this to a bowl to cool down slightly. Add the salt, chilli powder, dill and potatoes and mix it all well.

Now tear up the mozzarella and add to the bowl and mix it all well.

Place the slice of bread, then the potato mozzarella mix, some chilli garlic chutney and then place another slice of bread on top. Toast this in a hot pan with a drizzle of olive oil until golden and crispy. Enjoy x
