Peanut Banana Loaf Cake

This is the most baked cake in our house and only lasts a day or 2! its simple, easy and no fuss baking. Hope you will enjoy it too!

Ingredients
For the Cake Mix

60g crunchy peanut butter
100g unsalted butter, softened
150g golden caster sugar
2 large ripe bananas
2 eggs
200g plain flour
2 tsp baking powder
pinch of salt
100g dark chocolate chips

For the Ganache
large handful peanuts
200ml double cream
2 heaped tbsp crunchy peanut butter
100g dark chocolate chips

Method
– Preheat the oven to 180°C / 160°C with a fan.

– Grease and line a loaf tin.

– Place the peanut butter, butter, and caster sugar in a large bowl and beat for 2 minutes.

– Crumble the bananas into the bowl and mix well.

– Add the eggs and beat well.

– Add the flour, baking powder, salt, and chocolate chips. Mix well.

– Pour the mix into the cake tin and bake in the oven for 45-50 minutes.

– Place the peanuts onto a baking tray and roast in the same oven for 10 minutes. Take them out of the oven and allow them to cool before you roughly chop them up.

– Add the double cream to a pan and bring it to a boil. Take it off the heat, add the chopped peanuts, peanut butter, and chocolate chips, and stir through. Set aside.

– Once the cake is baked (a skewer should come out clean when pierced through) remove it from the oven and tin and let it cool slightly before you spread the ganache on top.
