Ingredients
oil of choice
2 brown onions, thinly sliced
2 red peppers, thinly sliced
2″ ginger, finely chopped
4 garlic cloves, finely chopped
8 chicken thighs, sliced into fingers
2 tbsp oyster sauce
½ tsp salt
½ tsp white pepper
2 tbsp sesame oil
1 red chilli, thinly sliced
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp shaoxing cooking wine
½ tsp black pepper
1 tsp chilli oil
Method
– Place the chicken, oyster sauce, salt, white pepper, and sesame oil in a large bowl. Mix well and let it rest for 5 minutes.
– Add 2-3 tbsp oil to a hot pan. Add the chicken and cook for 7-8 minutes.
– Transfer the chicken to a plate using a slotted spoon to leave the oil behind.
– Add the chilli, garlic, and ginger to the pan. Cook for 1 minute.
– Add the onion and peppers, and cook for 3-4 minutes on high heat.
– Add the soy sauce, the cooking wine, a pinch of salt, pepper, and chilli oil. Mix well.
– Add the chicken, stir through, and cook for 2 minutes.
