Nutty Biscotti

This is a super simple recipe – a perfect gift or festive treat!

350g plain flour
230g caster sugar
2 tsp baking powder
2 tsp mixed spice
2 large eggs
80g pecans, roughly chopped
80g almonds, roughly chopped
80g roast hazelnuts, roughly chopped

– Preheat the oven to 180°C / 160°C with a fan.

– In a large bowl, add the plain flour, caster sugar, baking powder, and mixed spice.

– A small bowl, whisk 2 large eggs. Add this to the flour mix. Mix well with your hands.

– Add all the nuts and mix through.

– Divide the dough into 4 even portions. Add some flour to your hands and roll each portion into a thick cylinder around 12 inches long. Then, place it on a lined baking tray. Repeat the process with the rest of the portions.

– Add to the oven and bake for 30 minutes.

– Once cooked, remove them from the oven and leet them cool for 2-5 minutes until it’s easier to handle.

– With a serrated knife cut the rolls at an angle into 1cm thick pieces.

– Place the pieces bake onto the lined baking tray and put them back in the oven at 120°C / 100°C with a fan. Bake for 15 minutes.

– Flip them all over and bake for another 15 minutes.

Let them cool completely and enjoy!
