There are hundreds of varieties of Bombay Mix, and I may be a little bit biased but none can beat my mum’s very own recipe.
Ingredients
2 sprigs fresh curry leaves
4 green chillies, roughly chopped
250g poha (rice flakes)
100g unsweetened cornflakes
150g peanuts
oil of choice
½ tsp salt
½ tsp turmeric powder
½ tsp chilli powder
¼ tsp sugar
Method
– Add 1-2 cups of oil to a deep pan and until piping hot.
– Add a handful of poha to a sieve, place it in the oil, and shake. They only need a few seconds to puff up. Then, transfer them to a large bowl. Repeat the process with the rest of the poha.
– Add a handful of peanuts to a sieve, place it in the oil, and cook for 2 minutes until golden. Shake off any excess oil and transfer to the large bowl. Repeat the process with the rest of the peanuts.
– Add the curry leaves to a sieve and cook for 1 minute. Add them to the bowl.
– Add the chillies to a sieve and cook for 1 minute. Add them to the bowl.
– Add the cornflakes, salt, turmeric powder, sugar, and chilli powder. Mix well.
