These are the most delicious festive brownies for this season. They are a lovely flavour from the fruits and Amaretto and taste delicious warm with some ice cream.
Ingredients
300g unsalted butter, cubed
300g 70% dark chocolate, chopped
5 large eggs
350g golden caster sugar
150g plain flour
50g cocoa powder
Pinch salt
1 tsp vanilla extract
½ jar Amaretto mincemeat (available at Waitrose)
50g pecan nuts, roughly chopped
Method
– Melt the butter and chocolate in a glass bowl over a pan of boiling water.
– Leave to cool for 5 minutes.
– Break the eggs into a mixing bowl and add the caster sugar.
– Whisk for 7-8 minutes until it is pale and fluffy.
– Add the cooled chocolate mix and beat together on a low speed until well-mixed.
– Add the flour, cocoa powder, salt and vanilla extract.
– Mix together and then continue to fold the mixture together by hand, keeping it light and fluffy.
– Pour half the chocolate mix into a 12”x7” lined brownie tray.
– Spoon mincemeat onto the brownie mix and then carefully pour the rest of the mix over it to cover it completely.
– Gently smooth the top and sprinkle the pecan nuts over.
– Bake in an oven preheated to 180°c for 30 minutes.
– Leave to cool completely (preferably overnight) before slicing.
Serve as they are, or warm slightly and serve with a scoop of vanilla ice cream.
