Chocolate Chip Cookies 3 Ways

In this recipe I’ll guide you through how to make chocolate chip cookies 3 ways. Get the whole family involved.

salted caramel sauce
roasted hazelnuts, roughly chopped

For the Cake Mix
225g softened unsalted butter
200g dark muscavado sugar
100g caster sugar
Nutella for filling
Biscoff spread for filling
1 egg
1 egg yolk
pinch of salt
½ tsp baking powder
110g bread flavour (strong white flour)
110g self raising flour
1 tsp vanilla extract
100g dark chocolate chips
100g dark chocolate chunks

– Scoop 5 x ½ tbsp of Nutella onto a lined baking sheet. Repeat this step with the Biscoff spread. Place the tray in the freezer for 1 hour.

– Place the butter and sugar in a bowl. Whisk until light & fluffy.

– Add the egg yolk and whole egg to the mixture. Whisk until smooth.

– Add the flour, salt, baking powder, and vanilla extract. Whisk until smooth.

– Fold in the chocolate chips and chocolate chunks with a wooden spoon. Place the dough in the fridge for 30 minutes.

– Preheat the oven to 180°C / 160°C with a fan.

– Take a lime-sized portion of the dough and form into a thick disc. Place a portion of the frozen Nutella into the centre and fold the dough around it. Roll it into a ball and place on a line baking tray. Repeat the process with the remaining Nutella. Repeat this process with the Biscoff spread.

– If you have some dough left, then form these into lime-sized balls and place them on the baking tray.

– Place all the trays in the oven and bake for 12-14 minutes.

– Remove them from the oven and let them cool slightly before you tuck in!
