This is another delicious recipe using basic store cupboard ingredients and I hope you will enjoy it!
Serves 4 people.
Ingredients
oil of choice
2 brown onions, thinly sliced
2 red peppers, thinly sliced
1½ tsp cumin seeds
1 large red potato, chopped into small pieces
2 garlic cloves, grated
400g chickpeas, drained and rinsed
400g chopped tomatoes
3 tsp ground cumin
1 tsp salt
1 tsp turmeric powder
2 heaped tsp rose harissa paste
6 eggs
½ tsp sugar
Method
– Add 2 tbsp oil to a hot pan. Add the cumin seeds and let them sizzle. Add the onions and cook for 5-6 minutes.
– Add the red peppers and garlic. Stir through and cook for 30 seconds.
– Add the potatoes, chickpeas, and chopped tomatoes. Stir through.
– Add the ground cumin, salt, turmeric powder, rose harissa paste, and 100ml water. Mix well, cover, and cook on low heat for 20 minutes.
– Add the sugar and stir through. Then, crack 6 eggs on top of the Shakshuka. Cover, and cook for 6 minutes.
Time to serve! I like to finish mine with some chilli flakes.
