Dinner in under 15 minutes – this quick, super easy, egg fried rice is perfect for those evenings where you want a low-effort dinner for you and your family.

Ingredients
oil of your choice
1 large brown onion, roughly chopped
200g white rice
4 boneless and skinless chicken thighs
4 garlic cloves, roughly chopped
300g tenderstem broccoli, roughly chopped
salt
4 eggs
ground black pepper
2 tsp chilli oil
1 tbsp oyster sauce
2 tsp red wine vinegar
1 tbsp soy sauce
Method
– Cook your rice according to packet instructions. Ideally, do this the day before so your rice is cold and slightly hardened.
– Chop the chicken into bite-size pieces
– Add 2/3 tbsp oil to a hot pan. Add the onions and cook for 5-6 minutes.
– Add the garlic and cook for 2 minutes. Add the chicken thighs, mix well, and cook on high heat for 5 minutes.
– Add the broccoli, stir through, cover, and cook on medium-low heat for 5 minutes.
– Add the eggs and a pinch of salt to a small bowl. Whisk thoroughly.
– Add ½ tsp salt and a generous sprinkling of ground black pepper to the chicken.
– Make a well in the pan and add 1 tbsp oil. Pour the eggs into the well and stir thoroughly to create scrambled eggs.
– Once the eggs are cooked, mix them with the chicken and broccoli. Then, add the rice and mix well.
– Add the chilli oil, oyster sauce, red wine vinegar, soy sauce, and ½ tsp salt. Mix well.
