Bhatura – fluffy bread!

These delicious fluffy flatbreads are part of the very popular Indian feast – Chole bhature. Chole being a warming chickpea curry and bhatura being a fried flatbread and the combination of these two is heavenly. Sharing my mum’s recipe here thats simple and doable at home. Yes, chole would be the classic dish to serve this with but dont stop just there, try it with chicken curry or a sabzi or dal of your choice too.

For the bhatura (makes 8)

300 gms plain flour

1/2 tsp salt

1/2 tsp sugar

1/2 tsp bi carb of soda

120 gms natural yogurt

1 tbsp sunflower oil/ or any other oil of your choice

80-90 ml lukewarm water

Sunflower oil to deep fry

Put the dry ingredients in a bowl and add the yogurt to it. Mix it well before adding a little bit of water at a time and bring it together into a soft dough. You might not need all the water or need a bit more. Knead for a few seconds, cover and let it rest for 1 hour.

Divide into 8 portions, roll out each portion into a circle around 6-8 inch big. You might want to sprinkle some flour on the surface for rolling so the dough does not stick to the surface.

Put enough oil in a pan for deep frying and once it gets to 160 C then start frying the bhatura. Cook for a minute on each side until golden. Serve this piping hot with some chole.
