Series 2 – Episode 1
CHEESE AUBERGINE SANDWICH
This is a delicious cheesy aubergine sandwich where I am cooking the aubergine with a hint of sour tamarind, a gentle sweetness and lots of ginger garlic for the warmth. Teamed with some mozzarella in some sourdough slices is just heavenly. Makes 2.

Ingredients
- 4 tbsp olive oil
- 1 aubergine, cut into chunks
- 2 onions, thinly sliced
- 1 tbsp ginger garlic (paste or chopped up)
- 1/4 tsp salt
- 1/4 tsp chilli powder
- 1/4 tsp brown sugar
- 1/2 chilli garlic paste
- 1/2 tsp tamarind paste
- 4 slices of sourdough
- 200 gms mozzarella
- chilli garlic chutney (optional)
Method
Cut the aubergine into chunks. Heat 2 tbsp oil in a pan and cook the aubergines chunks on high heat for a couple of minutes until golden. Remove them from the pan and keep them aside.
In the same pan add 2 tbsp of oil and cook the onions on medium heat until golden. Then add the ginger garlic and cook for another minute.
To this add the aubergine and all the spices – salt, chilli, sugar, chilli garlic and tamarind paste and mix well. Add 100 ml of boiling water, mix well, cover and cook for 10 minutes. Now remove the lid and cook on high heat for a minute to get rid of any extra liquid.
To make the sandwich, place one slice of bread, top it with the aubergine and tear up some mozzarella on top. Spread some chilli garlic chutney if you wish. Place the second slice and toast it in a hot pan with a drizzle of oil until its golden and crispy. Flip and crisp up the other side as well. Enjoy!
