COCONUT PRAWNS SANDWICH

If you are a fan of prawns then this sandwich is perfect for you. The prawns are cooked with a layer of coconut and basic seasoning making them delicious. They are crispy and moreish and yes great as a snack or a starter too. But if you are looking for a full meal then put them in the sandwich with a lovely green salad and some mayo making it irresistible. Makes 2.

Ingredients

  • 1 egg
  • 50 gms desiccated coconut
  • 8 king prawns, shelled and deveined
  • oil for frying
  • 60 gms mixed leaf salad
  • 1 tbsp extra virgin olive oil
  • pinch of salt
  • pinch of black pepper
  • 4 tbsp mayonnise
  • 1 tsp chilli garlic chutney
  • 4 slices of sourdough

Method

Once the prawns are shelled and deveined, give them a rinse and pat dry.

Whisk the egg with a pinch of salt and a pinch of chilli powder. Mix the plain flour with a pinch of salt and chilli powder as well. Now coat the prawns in the flour first, then dip them in the eggs and then coat them with the desiccated coconut. Prepare all the prawns in the same way.

Heat the oil in a small pan for deep frying, though you can shallow fry these as well. Cook for a couple of minutes on both sides until golden and crispy.

In a bowl mix the salad leaves with the olive oil, salt and pepper. In a small bowl mix the mayo and chilli chutney.

Toast the sourdough slices in a hot pan with a drizzle of olive oil. Place the slice then spread half the mayo, put half the salad, then 4 pieces of prawns, add extra chilli oil if you like then place the second slice of sourdough on top and serve immediately.
