SPINACH OMELETTE SANDWICH
Healthy, delicious and ready in no time, this is a must try sandwich. Simple ingredients and minimal effort, this spinach omelette is great with the addition of some dill and green chilli. You can even put this omelette in a wrap or a roti or just enjoy it on its own. Makes 1.

Ingredients
- 1 tbsp olive oil
- 1 red onion, roughly chopped
- 1 green chilli, finely chopped
- handful of spinach leaves, finely chopped
- 3 eggs
- handful of fresh dill, finely chopped
- 1/4 tsp salt
- 2 tbsp mayo
- 1 tsp chilli garlic chutney
- 2 slices of sourdough
- 1/2 cucumber, thinly sliced
- 1 tbsp tomato ketchup
Method
Heat the oil in a pan and add the onions, cook for 5 minutes until softened then add the green chilli. Next add the spinach and cook for a couple of minutes until the spinach has wilted.
In a bowl whisk the eggs with the salt and dill and pour this mixture over the wilted spinach. Cook for a minute or so on each side until done. Take it off the pan and cut it into slices.
Crisp up the slices of bread in a hot pan with a drizzle of olive oil. Mix the mayo and chilli garlic chutney together in a bowl.
Place the bread slice, then spread the mayo, followed by cucumber slices. Sprinkle some salt and pepper on top then place the slices of omelette. Spread the ketchup, place the other bread slice on top and enjoy.
