CAULIFLOWER YOGURT SANDWICH

This vegetarian delight of a sandwich is so delicious that you might eat the filling on its own before it gets to the sandwich so make sure to make extra. The cauliflower roasted is so simple to prepare but tastes fantastic with the flavoured yogurt. Add any salad leaves you like for that crunch! Makes 4.

Ingredients

  • 1 cauliflower, cut into florets
  • 2 tbsp harissa paste
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chilli powder
  • 100 gms fresh spinach leaves
  • pinch of salt
  • pinch of pepper
  • 1 tsp olive oil
  • few radish, thinly sliced
  • 200 gms greek yogurt
  • 1/2 tsp salt
  • 1/2 tsp chilli powder
  • 1/2 tsp ground cumin
  • Slices of sourdough

Method

Put the cauliflower on a baking tray with the salt, pepper, chilli powder and harissa paste and mix well. Preheat the oven to 200 C or 180 C fan. Roast the cauliflower for 20-25 minutes until golden.

Mix the yogurt with the salt, chilli and cumin and combine well.

Mix the spinach with salt, pepper and olive oil.

Roast 2 slices of sourdough in a hot pan with a little olive oil until golden and crispy.

Now assemble the sandwich, place the slice of sourdough, then some spinach leaves, then the radish, then the yogurt followed by cauliflower and then another slice of sourdough and enjoy!
