Ultimate Summer Salads

As requested by you! I have put together some refreshing summer salad recipes for you to try at home with (almost) no cooking involved!

Tomato and Feta Salad
Ingredients
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 bunches of cherry tomatoes, halved
1 red onion, roughly chopped
2 tbsp balsamic vinegar
2 tbsp olive oil
ground black pepper
sea salt
small handful fresh basil, roughly chopped
100g feta, crumbled

Method
– Dry roast the sunflower and pumpkin in seeds in a hot frying pan for 2 minutes or until you can smell them. Transfer them to a plate so that they cool quickly.

– In a large bowl, add the balsamic vinegar, olive oil, and a generous amount of ground black pepper and salt. Mix well.

– Add the onions, basil, tomatoes, and feta. Mix well and garnish with the roasted seeds. 

Chickpea and Rice Salad
Ingredients 

400g chickpeas, rinsed and drained
250g rice of choice, cooked
1 cucumber, roughly chopped
1 red chilli, roughly chopped
1 red pepper, roughly chopped
1 red onion, roughly chopped
handful fresh coriander, roughly chopped
handful fresh dill, roughly chopped
2 tbsp tahini
2 tbsp olive oil
ground black pepper
sea salt
juice of ½ lemon

Method
– Place all the vegetables and herbs in a large bowl and mix well.

– In a small bowl, mix the tahini, olive oil, a generous amount of ground black pepper and salt, and lemon juice. Whisk to combine and pour over the salad.

– Finally, add the rice and stir through.
