Something a bit different for your lunchtime meal but a must try! It’s easy to make and simply delicious.
Ingredients
1 cob of fresh sweetcorn
sunflower/olive/vegetable oil
5 eggs
½ tsp chaat masala
½ tsp salt
¼ tsp chilli powder
¼ tsp garam masala
4 tbsp plain flour
1 tbsp whole milk
2 handfuls of spinach
1 tsp chilli oil (optional)
Method
– Chop the corn off the cob and place them in a bowl.
– Add 2 eggs, chaat masala, salt, chilli powder, and garam masala. Mix well.
– Then, add the plain flour and milk. Mix well.
– Add 3 tbsp of oil to a hot pan. Take a small handful of the mixture and place it on the pan, in a flat, circular shape.
– Continue to do this until the pan is full. After a couple of minutes, flip the fritters and cook until they are golden brown and crispy on both sides.
– Whilst the fritters are cooking, heat another pan with 2 tbsp of oil. Add 3 eggs to the pan, cover, and cook for 5 minutes.
– Once the fritters are cooked, place them onto a plate. Add a handful of spinach leaves on top, along with an egg.
– Garnish with a pinch of salt and pepper, and chilli oil (optional) – enjoy!
