This is a simple yet delicious recipe for a quick prawn curry ready in minutes. You can enjoy this with rice, naan or bread.

Ingredients
oil of choice
1 tsp black mustard seeds
3 dried red chillies
8-10 curry leaves
1 large onion, roughly chopped
4 garlic cloves, roughly chopped
1 cm fresh ginger, roughly chopped
½ tsp salt
2 tomatoes, roughly chopped
2 tsp medium curry powder
fresh prawns
small handful fresh coriander leaves, finely chopped
Method
– Add 2 tbsp oil to a hot pan. Add the black mustard seeds, dried chillies, and curry leaves. Let them sizzle for 30 seconds.
– Add the onion and cook for 7-8 minutes until lightly golden.
– Add the ginger and garlic. Mix and cook for 1 minute.
– Add the tomatoes, mix, and cook for 2 minutes.
– Add the salt and curry powder. Mix well.
– Add the prawns with a splash of water. Mix and cook for 2 minutes until the prawns are pink.
– Add the coriander leaves, stir through, and serve!
