Savour the freshness of this quick halloumi salad paired with a light onion and tomato salsa. Perfect for a speedy meal or a barbecue side, it’s ready in minutes. This is from my dear friend John’s book, ‘Turkish Delights’ and is a must try!
Ingredients
½ red onion, finely chopped
juice of ½ lemon
salt
6 cherry tomatoes, finely chopped
small handful mint, finely chopped
small handful parsley, finely chopped
pomegranate molasses
pul biber
olive oil
black pepper
½ green chilli, finely chopped
225g halloumi, finely sliced
Method
– Place the onion in a small bowl. Add the lemon juice and a pinch of salt. Mix well.
– Add the tomatoes, mint, parsley, a pinch of pul biber, and a drizzle of pomegranate molasses. Mix well.
– Add a drizzle of olive oil, pinch of black pepper, and green chilli. Mix well and set aside.
– Add 1 tbsp olive oil to a hot pan. Add the halloumi slices and cook for 4-5 minutes on both sides.
– Place the halloumi on a serving plate and top with the salsa.
