Onion Garlic Coriander BREAD

This is an easy loaf of bread that I am sure you will love baking. The soft crumb of the bread packed with intense flavours of onion, garlic and coriander makes it irresistible and will soon become a regular in your kitchen. You can add whatever seeds you prefer for that extra crunch on the crust.

For the bread

  • 500 gms strong white flour
  • 10 gms salt
  • 10 gms fast action yeast
  • 40 ml olive oil
  • 300 ml water
  • 1 red onion, finely chopped
  • 2-3 garlic cloves, finely chopped
  • handful of fresh coriander, finely chopped
  • 2 tbsp sesame seeds
  • 1 tbsp cumin seeds
  • 1 tbsp nigella seeds

Start by mixing the flour with salt and yeast. Now add the oil followed by the water and mix. You might not need all the water or need a bit more. Now knead this in a stand mixer or by hand for 8-10 minutes until smooth and stretchy.

Brush some oil in a bowl and transfer the dough in it, cover and leave it in a warm space for an hour or 2 until doubled in size.

Now punch and knead the dough to get all air out. Add the onion, garlic and coriander to it and knead it all together. Now shape the dough in a loaf shape and place it on a floured baking sheet.

In a small bowl mix the seeds. Brush the loaf with some water and sprinkle the seeds on top. Cover and let it prove for an hour until increased in size.

Preheat the oven to 220 C and bake this for 30 minutes until golden and baked through.
