Ingredients
For the Biscuits
120g unsalted softened butter
120g caster sugar
1 tsp vanilla extract
1 tsp ground cardamom
90g ground almonds
30g ground hazelnuts
120 00flour
For the Filling
5 tbsp nutella
4 tbsp warm water
2 tbsp roasted crushed hazelnuts
Method
– Preheat the oven to 180°C / 160°C with a fan.
– Beat the butter and sugar with a wooden spoon until smooth and creamy.
– Add the vanilla and cardamom and mix well. Now, add the almonds, hazelnuts and flour and combine it all well.
– Once smooth, roll it out into sausage shape and divide it into 20 portions.
– Line 2 baking sheets with baking parchment and shape each portion into a small ball and place it on the prepared sheet.
– With your fingers, gently press on the shaped balls to flatten it out slightly. Bake for 15-18 mins until slightly golden. Place them on a cooling rack until cooled down completely.
– In a bowl, mix the nutella with the warm water and loosen it slightly. Now add the hazelnuts to it and combine.
– Put 1 tbsp of the filling on one biscuit and sandwich it with another. Repeat with all the biscuits.
Store in an airtight box and eat it within 3-4 days.
