Masala Alu

Here’s one of my go-to recipes when I’m in the mood for something quick, vegetarian, and delicious. Learn how to make masala aloo with this easy recipe. It’s a fuss-free option for a satisfying weekday meal!
Serves 4 people.

Ingredients
oil of choice
1 tsp black mustard seeds
10-12 fresh curry leaves
2 green chillies, halved
1″ fresh ginger, finely chopped
2 brown onions, thinly sliced
2 medium tomatoes, roughly chopped
8 potatoes, peeled and boiled
1½ tsp salt
1 tsp turmeric powder
1 tsp garam masala
1 tsp amchoor/dried mango powder
handful fresh coriander leaves, roughly chopped

Method
– Add 2 tbsp oil to a hot pan. Add the black mustard seeds and let them sizzle for 30 seconds.

– Add the curry leaves, green chilli, and ginger. Mix and cook for 2 minutes.

– Add the onions and cook for 8 minutes.

– Add the tomatoes and cook for 5-6 minutes.

– Add the salt, turmeric powder, garam masala, and amchoor powder. Mix well.

– Roughly chop the boiled potatoes. Add these to the pan with 100ml water. Mix well, cover, and cook on low heat for 5 minutes.

Transfer to a serving bowl and garnish with fresh coriander.
