A quick and healthy dinner for all the family, ready in under 30 minutes!
Ingredients
2-3 tbsp sunflower/vegetable Oil
1 medium onion
2 garlic cloves, grated
1 thumb-sized piece of ginger, grated
1 small cauliflower
4 red potatoes
2 large tomatoes
1 bunch of cavolo nero/kale
1 tsp cumin seeds
1 tsp black mustard seeds
1 tsp salt
1 tsp chilli powder
2 tsp ground coriander
1 tsp garam masala
1 tsp turmeric
1 tsp of amchoor powder/dried mango powder
Method
– Add the oil, cumin seeds, and black mustard seeds to a hot pan.
– Let them sizzle, then add the onions and cook for 10 minutes until golden.
– Meanwhile, roughly chop all your vegetables.
– Add the ginger and garlic, and cook for 2 minutes.
– Then add the tomatoes and cook for 4 minutes.
– Add the cauliflower, and potatoes, along with the salt, chilli powder, ground coriander, garam masala, turmeric, and amchoor powder. If you don’t have amchoor powder, squeeze some lemon juice in at the end.
– Mix well and cook on high heat for 2 minutes before adding the cavolo nero.
– Add 2 tbsp of water, cover and cook on low heat for 15 minutes.
Serve with rice and papad, or even in a wrap for lunch!
