This is such a fun recipe and the pizzas are ready in minutes, no proving, no kneading and no oven required. Perfect for a Monday night family meal.
This recipe is from my friend John-Gregory Smith’s Book, ‘Fast Feasts’.
Serves 4 people.
Ingredients
For the Dough
300g self-raising flour
300g greek yoghurt
pinch of salt
½ tsp bicarbonate of soda
For the Toppings
Lebanese Inspired
za’atar
1 mozzarella ball
olive oil
Garlic Bread
2 tbsp butter
2 garlic cloves, grated
handful fresh parsley, roughly chopped
pinch of salt
Method
– Combine the self-raising flour, greek yoghurt, salt, and bicarbonate of soda in a large bowl to form the dough.
– Tip it out onto your counter and knead for 5 minutes.
– Divide the dough into 4 even portions. With a rolling pin, roll out each portion into a large circle.
– Place one circle of dough in a large oven-proof frying pan. Tear the mozzarella and distribute it across the dough.
– Sprinkle a generous pinch of za’atar and drizzle some oil over the dough. Cook for 4-5 minutes until the dough turns golden.
– Place the pan under the grill for 1 minute until the cheese starts to bubble.
– Remove from the oven, transfer to a chopping board, and slice into 6-8 pieces – Enjoy!
– In a bowl, combine the butter, grated garlic, parsley, and salt.
– Place another circle of dough in the frying pan. Spread the butter mixture all over the dough. Cook for 4-5 minutes until the dough turns golden.
– Place the pan under the grill for 1 minute until golden.
– Remove from the oven, transfer to a chopping board, and slice into 6-8 pieces – Enjoy!
