Drumstick Masala (Moringa)

Munga, Drumstick, Moringa Oleifera, (or whatever you want to call it) should be available in your local asian supermarket. This tradition masala has been perfected by my very own mum and will not disappoint!
Serves 4

oil of choice
large handful of drumsticks
2 brown onions, roughly chopped
1 tsp cumin seeds
4 garlic cloves, finely chopped
2 large tomatoes, roughly chopped
2 green chilli, grated
2 large potatoes, peeled and roughly chopped
1 tsp salt
1 tsp turmeric powder
2 tsp ground coriander
1 tsp garam masala
½ tsp chilli powder

– Prep the drumsticks by cutting them into 2″ pieces and remove the tough, fibrous parts.

– Add 2-3 tbsp oil to a hot pan. Add the cumin seeds and onion, and cook for 5 minutes until lightly golden.

– Add the green chilli, garlic, and tomatoes. Cook for another 5 minutes.

– Add the salt, turmeric powder, ground coriander, garam masala, and chilli powder. Mix well.

– Add the potatoes and cook for 2 minutes.

– Add the drumsticks and cook for 2 minutes.

– Add 300ml of boiling water, stir through, cover, and cook for 20 minutes or until the potatoes are done.

– Transfer to a large serving bowl ready to serve with some piping hot basmati rice!

Remember, you don’t eat the whole drumstick, you just chew out the beans inside.
