Date & Walnut Brownies

This rich, moist, and nutty brownie recipe is from Yasmin Khan’s book, Ripe Figs

Ingredients
60g cocoa powder
150g dates, deseeded and roughly chopped
200g granulated sugar
100g walnuts, roughly chopped
3 eggs
200g dark chocolate, melted
250g unsalted butter, softened
¼ tsp salt
½ baking powder
65g plain flour

Method
– Preheat the oven to 180°C / 160°C with a fan

– Grease and line a large, rectangular baking pan. 

– Add the butter and sugar to a large bowl, and whisk until creamy.

– Add the eggs and whisk until smooth.

– Add the salt, baking powder, cocoa powder, plain flour, walnuts, and dark chocolate. Fold everything in.

– Pour the mixture into the baking pan, place in the oven, and bake for 25 minutes.

– Once baked, remove it from the pan and let it sit for 10 minutes before slicing it up to enjoy.
