Chicken Harissa Sandwich

This is a super simple recipe for any leftover chicken or ready-cooked chicken you may have in the fridge. It’s got plenty of flavour and crunch!

Ingredients
200g cooked chicken
15g coriander leaves
20g mayonnaise
1 tbsp sunflower oil
2 tsp harissa pesto
1 baguette
1 sliced tomato
½ red onion
2 large lettuce leaves

Method
– Roughly tear and cut the cooked chicken chicken and add to a hot frying pan with 1 tbsp of sunflower oil, cook until chicken is hot.

– Mix in a pinch of salt and pepper as well as 2 tsp of harissa pesto and 25ml of water. Cover and continue to cook for 3-4 minutes

– Turn off the heat and sprinkle over the coriander leaves

– Cut the baguette in half longways.

– Spread the mayonnaise onto the bread, add the sliced tomato, sliced onion and lettuce leaves followed by the chicken.

Time to tuck in!
