Best Fudgy Chocolate Brownies

These brownies are easy to make but they are absolutely the best. For me brownies need to be gooey and moist to be delicious and this one fits the bill. Try it with some nuts on the top for added crunch and flavour.

Ingredients
300g unsalted butter, melted
300g 70% dark chocolate
5 large eggs
200 golden caster sugar
150 dark brown soft sugar
150g plain flour
50g cocoa powder
1/4 tsp salt
1 tsp vanilla extract
50g pecan nuts, roughly chopped

Method

– Preheat the oven to 180°C / 160°C with a fan.

– Melt the butter in a saucepan.

– Add the dark chocolate to a large bowl and pour over the hot melted butter. Mix well until thoroughly combined.

– Grease and line a baking tray.

– Add the eggs, caster sugar, and soft brown sugar to an electric mixer. Whisk for 3-5 minutes until creamy and light.

– Add the melted chocolate mixture and whisk for 2 minutes until combined.

– Add the salt and vanilla extract. Add the flour and cocoa powder through a sieve. Use a spoon to mix.

– Pour the mixture onto the tray and make sure it reaches the corners. Sprinkle the pecan nuts on top.

– Bake in the oven for 30 minutes.

– Remove from the oven and let it cool completely. Alternatively, scoop a large spoonful into a bowl and enjoy with some ice cream.
