Pistachio and chocolate cookies

I am a self confessed cake lover but there is something so special about freshly made warm cookies that just melt in your mouth. These pistachio chocolate chip cookies are insanely delicious, so easy to make and once you have tried this version next time you can make them with other nuts like hazelnuts or walnuts. These serve well as little edible gifts for friends and family. These make around 24 pieces or so but you can half the recipe and make less or make the full recipe and freeze half the mixture and bake them whenever you want warm cookies.

For the cookies

  • 150 gms unsalted butter
  • 240 gms soft brown sugar
  • 120 gms granulated sugar
  • 2 tbsp pistachio paste (optional)
  • 1 tsp vanilla paste
  • 2 eggs
  • 300 gms plain flour
  • 1 tsp bicarb of soda
  • 1/2 tsp salt
  • 200 gms dark chocolate, roughly chopped
  • 150 gms pistachio, roughly chopped

Heat the butter in a pan until it melts, starts bubbling and turns golden, this takes around 5 minutes. Leave it aside to cool for 5-10 minutes.

Transfer to a bowl, add the sugars and mix well. To this add the vanilla paste and pistachio paste. Next add the eggs and beat it together. Now add the flour, salt and bicarb of soda and stir.

To this add 3/4th of the chocolate pieces and 3/4th of the pistachio pieces and bring it all together. Let the dough rest in the fridge for 10 minutes if you have the time.

Preheat the oven to 180C or 160C fan. Line 2 baking trays with some baking parchment.

Divide into small portions, shape into balls and place them on the prepared baking trays. Sprinkle some of the pistachio and chocolate pieces on top of the cookies and bake for 12-14 minutes until the sides start to turn golden. Once baked place them on the cooling racks for a few minutes to set. Enjoy them warm or totally set.
