Potato and Paneer Vada

These little balls of delight are perfect for party nibbles, a quick snack, or accompaniment to a main meal!

Ingredients
3 red potatoes, peeled, boiled, and cooled
225g paneer, crumbled or grated
2 red onions, finely chopped
2 garlic cloves, finely chopped
1 tsp salt
1 tsp chilli paste
1 tsp garam masala
3 tbsp cornflour
handful fresh coriander leaves, finely chopped

Method
– Mash the potatoes in a large bowl.

– Add the rest of the ingredients (aside from the oil) and mix well.

– Heat 2 cups of oil in a deep frying pan. Heat to 170°C.

– Take a small portion of the potato mixture and roll it into a ball. Repeat this process with the rest of the mixture.

– Drop these balls into the hot oil in batches and cook on medium heat until golden brown.

– Use a slotted spoon to transfer the balls onto a kitchen roll-lined plate to remove any excess oil.

Place them on a serving plate and tuck in!

I like to serve mine with coriander and mint chutney, ketchup and mayo, or hummus.
