Potato Canapés

Elevate your party with these super delicious potato canapés! Prep them in advance and assemble just before the party. Perfect as starters or for snacking, they’re sure to be a hit. Enjoy!

Ingredients
1 tsp cornflour
oil of choice
coriander and mint chutney
mini cashew nut and paneer kofta
tamarind chutney
ready sev

For the Dough

100g plain flour
¼ tsp salt
¼ tsp turmeric powder
¼ tsp chilli powder
1 tbsp sunflower oil

Method

– Place all the ingredients for the dough in a large bowl. Mix well.

– Slowly add 50ml water while you continue to mix and stop when you form a soft dough.

– Knead the dough on a clean surface for 30 seconds. Place it back in the bowl, cover it, and let it rest for 15 minutes.

– Dust your work surface with plain flour. With a rolling pin, roll out the dough into a large thin circle.

– Use a 2” cookie cutter to cut the dough into small circles.

– Mix the cornflour with 2 tsp water.

– Prick each circle with a fork several times. Then, take one circle and use your finger to spread the cornflour mixture along one side. Pinch this side together to make a leaf shape.

– Heat 2 cups of oil in a deep frying pan. Carefully drop the leaves into the oil and cook until golden on both sides. Use a slotted spoon to remove them from the oil and place them on a kitchen roll-lined plate to remove any excess moisture.

– To assemble the canapés, add 1 tsp of chutney to each leaf. Then, place a kofta on top of each one.

– Garnish with a drop of tamarind chutney and a sprinkle of sev.
