Yoghurt and Vegetable Sandwich

I know it sounds odd to add yoghurt to a sandwich but trust me, you’re going to want to try this – it makes such a different to this delicious lunchtime bite.
This recipe makes 1 sandwich.

¼ cabbage, grated
½ carrot, grated
¼ green pepper, finely chopped
¼ red pepper, finely chopped
small handful fresh coriander, finely chopped
1 green chilli, finely chopped
pinch of salt
pinch of black pepper
pinch of chilli powder
4-5 tbsp Greek yoghurt
slices of white bread
olive oil
1 tsp mustard seeds

– Place the cabbage, carrot, green and red pepper, fresh coriander, and green chilli in a large bowl. Mix well.

– Add a pinch of salt, black pepper, chilli powder, and yoghurt. Mix well.

– Spread the filling onto one bread slice and top with the other.

– Heat 1-2 tbsp oil in a hot pan. Add the mustard seeds and let them pop.

– Add the sandwich and cook on both sides for 2-3 minutes or until golden and crispy.

– Time to serve!
