These delicious, slightly spicy paratha are filled with paneer and cheddar, and perfect for lunch or dinner for the whole!
This recipe serves 6 people.
Ingredients
500g chapati flour
1 tsp salt
½ tsp carom seeds
½ tsp chilli powder
½ tsp turmeric powder
400ml water
1 red onion, finely chopped
2 garlic cloves, finely chopped
1 handful of fresh coriander, finely chopped
1 green chilli, finely chopped
225g paneer
100g cheddar cheese, grated
Olive oil/ghee
Method
– In a large bowl, add the flour, salt, carom seeds, chilli powder, and turmeric powder. Mix well.
– Add the water a little at a time and stop when you have got a nice soft dough.
– Once the dough has come together, knead it for 30 seconds until smooth
– Cover the dough and let it rest for 30 minutes.
– Meanwhile, in another bowl, add the red onion, garlic cloves, fresh coriander, and green chilli. Mix well.
– Then, crumble the paneer into the bowl and add the cheddar cheese. Mix well.
– Add some flour to a bowl. Tear off a lime-size portion from the dough and roll it into a ball.
– Roll the ball of dough in the flour to lightly coat it. Then, use a rolling pin to flatten the ball into a palm-sized circle.
– Fill the circle with the cheese mix and then pinch the sides together firmly.
– Roll the dough in some flour again and then flatten again with a rolling pin.
– Heat your pan on medium heat.
– Add the paratha to the pan and cook for 2 minutes on each side. Then, lightly spread some oil onto both sides and cook for 1 minute on each side until golden and cripsy.
– Repeat with the rest of the dough.
Serve with a main dish or as a tasty snack!
