I had these burgers at the Broadstairs food festival and thought I would recreate it for you all.
Serves 4
Ingredients
1 red onions, thinly sliced
oil of choice
400g tinned green jackfruit, thinly sliced
½ tsp salt
½ tsp chilli powder
½ tps paprika
½ ground cumin
3 tbsp barbecue sauce
cheddar cheese, thinly sliced (optional)
¼ cucumber, sliced
1 tomato, thinly sliced
salad leaves
4 burger buns
Method
– Add 2 tbsp of oil to a hot pan. Add the onion and cook for 5-6 minutes to soften.
– Add the jackfruit, salt, chilli powder, cumin. Mix well.
– Add 150ml hot water. Mix well, cover, and cook on medium-low heat for 20 minutes.
– Take it off the heat. Add the barbecue sauce and stir through.
– Heat another pan. Add ¼ of the jackfruit mixture to this pan. Use a potato masher to break it apart. Cook for 2 minutes.
– Then, use a spoon to form a burger shape. Place a few slice of cheese on top and cover. Cook for 2 minutes.
– Repeat the process with the rest of the jackfruit mixture.
– To assemble the burger, layer one half of a bun with salad leaves, and cucumber. Place the jackfruit burger on top, add the tomato, and a pinch of salt. Top with the other half of the bun. Repeat the process with the rest of the ingredients.
