Vegan Potato Burger

The sun is shining and we all feel like having burgers. So, this recipe shows you hot to make spicy potato burgers which just so happen to also be vegan and super easy to make.
Serves 2

Ingredients
1 large potato, peeled and boiled until fork tender
salt
chilli powder
¼ tsp ground cumin powder
1 tbsp cornflour
handful fresh coriander leaves, roughly chopped
2 heaped tbsp breadcrumbs
2 cups oil of choice
1 red onion, thinly sliced
lemon juice
1 large tomato, thinly sliced
2 buns of choice
2 tbsp coriander and mint chutney
handful salad leaves
chilli sauce

Method

– Grate the potato into a large bowl. Add a pinch of salt, a pinch of chilli powder, ground cumin, and coriander leaves. Mix well.

– Divide into 2 equal portions and use your hands to shape them into a burger.

– Place the cornflour in a small bowl along with 1 tbsp water and mix into a smooth paste.

– Place the breadcrumbs onto a plate. Coat each burger in the breadcrumbs, then lightly coat them in the cornflour mix, and finally coat them in another layer of breadcrumbs.

– Add the oil to a pan and heat it up to a simmer. Carefully place the burgers in the oil and fry until golden and crispy on both sides.

– Break the red onion up into rings and place them in a bowl. Add a pinch of salt and chilli powder with a squeeze of lemon juice.

– To assemble the burger, spread a layer of the coriander chutney onto the bottom slice of each bun. Then, add some salad leaves, the burger, a slice of tomato, some red onion, and a drizzle of chilli sauce. Top with the other half of the bun.
