This is an easy, warming, spicy and delicious soup that is a must try and so delicious with Prawns. Taught to me by a Thai chef who I met on my adventures in Thailand.
Serves 2 people.
Ingredients
1″ galangal, roughly chopped
1 lemongrass, roughly chopped
4 kaffir lime leaves, roughly chopped
1 red onion, roughly chopped
1 tomato
juice of 2 limes
1 red chilli, roughly chopped
mushrooms
small handful Thai parsley/coriander, roughly chopped
3 tbsp fish sauce/soy sauce
6-8 king prawns
400ml vegetable/chicken stock
Method
– Place the vegetable stock in a pan with the galangal, lemongrass, kaffir lime leaves, and red onion. Bring to a boil.
– Add the red chilli and mushrooms and cook for 5 minutes.
– Add the tomato and cook for 5 minutes.
– Add the prawns and cook for 3-4 minutes.
– Add the fish sauce and Thai parsley, stir through, and turn off the heat.
– Add the lime juice and stir through.
Time to serve!
