Toasted Paneer Sandwich

Indulge in the nostalgia of my favourite sandwich—my mum’s special, a staple in my packed lunches and picnic memories. The incredible flavours come together with paneer, onions, all cooked in ghee for that extra touch of goodness. A delicious trip down memory lane!
Makes 2-3

Ingredients
ghee/oil of choice
100g paneer, grated
½ onion, finely chopped
1 green chilli, finely chopped
¼ tsp salt
small handful fresh coriander, finely chopped
4-6 slices of white toast
black mustard seeds

Method
– Mix the paneer, onion, chilli, salt, and coriander in a bowl.

– Add 1 tsp ghee to a hot pan. Add a pinch of black mustard seeds and let them sizzle for 3 seconds.

– Add 1 slice of toast and a handful of the paneer mixture. Place another slice of bread on top and let it cook for 4 minutes.

– Add a drizzle of ghee and a pinch of black mustard seeds on top. Carefully flip over the sandwich and cook for another 4 minutes.

– Repeat the process with the remaining ingredients.

Time to tuck in!
