Here’s my easy take on the classic Italian dessert, Tiramisu – a delightful treat that happens to be my kids’ favourite! Simple to make and absolutely divine in taste, this recipe is a must-try for a sweet and satisfying experience.
Ingredients
4 large eggs
80g caster sugar
250g mascarpone cheese
250ml double cream
3 tbsp instant coffee granules
2 tbsp coffee liqueur
dark chocolate for grating
24 sponge fingers
cocoa powder to dust
Method
– Separate the egg yolks from the whites into small bowls.
– Place the eggs whites in a stand mixer and whisk to form soft peaks. Transfer to a large bowl.
– Place the eggs yolks and caster sugar in the stand mixer. Whisk for 8-10 minutes until light and creamy.
– Add the mascarpone cheese and double cream. Whisk for 2 minutes.
– Gently fold this mixture into the eggs whites until combined. Set aside.
– Mix the coffee granules, 300ml of boiling water, and coffee liqueur in bowl.
– Grab a medium-sized glass dish. Take one sponge finger and dip it in the coffee mixture. Add this to the base of the dish and repeat until the bottom is covered.
– Pour half of the cream mix on top. Dust over some cocoa powder and finely grated chocolate.
– Repeat the process with the remaining ingredients.
Place it in the fridge for 4-5 hours before you tuck in!
