Super Quick Stir Fry Noodles

As the name suggests, this recipe is very low effort and a great option for those busy evenings where you still want a tasty dinner for you and your family.
This recipe serves 4

sunflower/rapeseed/vegetable oil/chilli rapeseed oil
300g ready cooked udon noodles
a handful of spring onions, finely chopped
a handful of tenderstem broccoli, roughly chopped
1 red bell pepper, roughly chopped
2 boneless chicken breast, cooked
1 tbsp dark soy sauce
1 tbsp oyster sauce
½ tsp salt
1 tsp chilli sauce

– Add the noodles to a pan of boiled water and let it sit for 5 minutes.

– Add 2-3 tbsp of oil to a hot pan and add the spring onions. Cook on high heat for 2 minutes.

– Add the broccoli, cover, and cook for 5 minutes.

– Add the red bell pepper and cook for 2 minutes.

– Drain and rinse the noodles. Add a drizzle of oil.

– Shred up the chicken breast and add it to the pan.

– Add, the soy sauce, oyster sauce, salt, chilli sauce, and noodles. Mix well and cook for 2 minutes.

Garnish with some finely chopped green onions and a drizzle of chilli oil (optional) – enjoy!
