Sumac & Oregano Chicken Wings

These delicious chicken wings are inspired by John Gregory Smith’s recipe in his book “Turkish Delights”.

Ingredients
1kg chicken wings
1 tsp chilli powder
1 tsp sumac
1 tsp dried oregano
½ tsp ground cumin
½ tsp salt
2 tbsp greek yoghurt
2 tbsp olive oil

Method
– Cut the wings in half on the joint to make smaller bites

– In a large mixing bowl add the chicken, chilli powder, sumac, dried oregano, ground cumin, salt, greek yogurt and olive oil.

– Mix and allow to marinate for at least 1 hour in the fridge, overnight preferably.

– Preheat the oven to 200°C / 180°C with a fan.

– Add some vegetable oil to a hot griddle pan and fry the chicken wings for 10 mins

– Transfer the semi-fried chicken wings to a baking tray and put into the oven for 15 mins or until cooked.

You can serve them with some fries, salad, or snack on them as much as you like!
