Spicy Scrambled Eggs

Ingredients
oil of choice
1 brown onion, finely chopped
1 green chilli, finely chopped
1 large tomato, roughly chopped
4 eggs, whisked
bread of choice
1 tsp butter
pinch of salt
pinch of black pepper
pinch of chilli flakes
small handful fresh coriander leaves, finely chopped

Method
– Add 1 tbsp oil to a hot pan. Add the onion and cook for 4-5 minutes.
– Add the green chilli and tomato. Cook for 2 minutes.
– Add the eggs and butter, and stir continuously.
– As it comes together, add the salt, pepper, chilli flakes, and coriander. Mix well.
– Serve a-top your favourite buttered slice of toast. Enjoy!
