This is a simple meal but full of flavour. The ideal go-to for a midweek meal when you’re not sure what to make.
Ingredients
oil of choice
3 brown onions, thinly sliced
1 tsp black mustard seeds
3-4 dried red chillies
1 tbsp urad dal
3 red potatoes (900g), peeled and chopped into small pieces
1 tsp salt
1 tsp chilli powder
1 tsp turmeric powder
1 tsp amchoor (dried mango) powder
fresh coriander leaves, roughly chopped
Method
– Add 2 tbsp oil to a hot pan. Add the mustard seeds, red chillies, and urad dal. Cook for 1 minute and then turn the heat down.
– Add the onions and cook for 10-15 minutes on medium-low heat.
– Add the salt, chilli powder, turmeric powder, amchoor powder, and potatoes. Mix well.
– Add 200ml water, stir through, cover, and cook on low heat for 15-20 minutes.
Garnish with some fresh coriander leaves and it’s time to serve! I like to have mine with piping hot basmati rice or fresh naan.
