Spicy Chicken Harissa with Broccoli & Potatoes

This mouthwatering masterpiece is a one-tray wonder! With succulent chicken, wholesome broccoli, and crispy potatoes, all baked to perfection. Super simple and a perfect weekday meal for the whole family. This can be part of a bigger meal or can be eaten on its own. 
Serves 4

Ingredients
4 red potatoes, peeled and quartered
8 skinless chicken thighs on the bone
2 tbsp harissa paste
salt
6 garlic cloves, finely chopped
olive oil 
200g tenderstem broccoli, halved

Method
– Preheat the oven to 200°C / 180°C with a fan. 

 – Tidy up the chicken thighs and make a few slits on each thigh. Place them in the tray along with the potatoes. 

 – In a small bowl, mix the harissa paste, 1 tsp salt, garlic cloves, and 4 tbsp olive oil. Pour this over the chicken and potatoes and make sure everything is thoroughly coated. Place them in the oven and cook for 35 minutes. 

 – Place the broccoli in a bowl. Add a pinch of salt and pepper and a drizzle of olive oil. 

 – Remove the pan from the oven and stir through. Add the broccoli on top and place the pan back in the oven for 10 minutes. 

 Time to tuck in and enjoy!
