Ingredients
500g plain flour
1 tsp salt
½ tsp sugar
1 tsp baking powder
100ml milk, warmed
1 egg
100ml water
sunflower/rapeseed/vegetable oil
4 tbsp salted butter, softened
3 cloves of garlic, grated
1 red chilli, finely chopped
1 handful of fresh coriander, finely chopped
Method
– Mix the flour, salt, sugar, and baking powder in a large bowl.
– Whisk the milk and egg in a separate bowl and then add to the flour.
– With your hands, mix in the water a little at a time.
– When the mixture becomes thicker, remove from the bowl and start kneading on a dusted countertop for 3 minutes.
– Place the dough in a clean bowl, cover, and let it rest for 10 minutes.
– After it has rested, roll the dough into a large tube shape and cut into 10 equal pieces.
– With some oil on your fingers, fold each piece into a round ball and let them rest for 5 minutes.
– Meanwhile, mix the butter, garlic, chilli, and coriander in another bowl.
– With some more oil, roll out each dough ball into an oval shape.
– Heat a large wide-based pan. Once the pan is really hot, add one oval to the pan. When it starts to form bubbles, flip it over and cook for 1 minute.
– Repeat the process for all pieces.
– Then, spread the garlic, chilli butter, evenly across each piece.
