Smashed Potato Sandwich

This sandwich is a delightful combination of creamy smashed potatoes and crunchy coleslaw, layered between slices of focaccia for an extra satisfying and flavourful bite.
This recipe serves 3 people.

new baby potatoes
gunpowder spice blend
olive oil
1 carrot, grated
¼ cabbage, grated
small apple, grated
red onion, thinly sliced
herbs of choice, finely chopped
2 tbsp mayonnaise
chilli oil (optional)

– Preheat your oven to 200°C.

– Place the potatoes in a pan and cover them in water. Add a pinch of salt and then bring to a boil. Cook for 5-6 minutes.

– Transfer the potatoes to a baking tray and smash them with the bottom of a glass. Add a drizzle of oil and cook in the oven for 30 minutes or until golden and crispy.

– Place the grated carrot, cabbage, and apple in a large bowl. Add the red onion, herbs and mayonnaise, with a generous pinch of salt and pepper. Mix well.

– Slice your focaccia in half. Spread some butter over the inside of each slice. Add 1 tbsp coleslaw, some potatoes, a drizzle of chilli oil, and top with the other slice of bread.
